grapes of perfect physiological ripeness allow for a very gentle subsequent treatment, without the need of any »heavy« cellar technique. the percentage of botrytis in the particular crop, along with sensoric analysis, defines the later wine’s type and quality. whole bunch pressing, or the use of a historic basket press, ensure the highest quality musts, which usually undergo a natural sedimentation by gravity only.
